asian chicken salad


I have been looking for easy summer recipes to make and this salad fits the bill. You can make it in the morning and come dinner time all you have to do is sit down and eat. Perfect for when you spend the afternoon at the pool!

For the salad::

6 Cups shredded green cabbage

4 green onions, chopped

wonton strips

one large avocado, sliced

two chicken breasts, cooked and chopped small

For the dressing::

1 1/2 T Sirachi sauce

3 tsp fresh grated ginger

4 T brown sugar

4 T rice wine vinegar

 

For this recipe I prefer to grill my chicken. I season both sides of the chicken breast with salt and pepper prior to grilling. In a large bowl combine cabbage, green onions,and chicken and refrigerate.  Add wonton strips, avocado slices and dressing just before serving. If I am having this salad for lunch all week I just add the avocado, wonton strips, and dressing daily so the other ingredients won’t get soggy. The dressing keeps well in the fridge!
