no bake energy bites

I found this recipe last week {via pinterest of course!!} My husband and I have been looking for some kind of healthy snack and these arrived on my computer screen at just the right time. Eating the energy bites feel like I am getting to eat a treat but they are packed with things that are healthy too.

I usually have one at the crack of dawn before I run and in the afternoon for a snack. Oh, ok and I sometimes I have one in the evening for a treat too. Unfortunately Noah can’t eat this due to the pb in them but that just means more for me!! I am thinking about making Noah a batch with sunflower butter so I will let you know how that goes.

No Bake Energy Bites
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp vanilla
Combine all ingredients in a bowl and chill in the refrigerator for 30 minutes. Once chilled, roll in to bite size balls. Store in an air tight container in the fridge for up to one week. {Just so you know they’ll be long before a week is out!}
